For authoritative:

# version-string        PowerDNS version in packets - full, anonymous,
powerdns or custom
#
version-string=anonymous


For recursor:

I dont know if it has the same keywords (full, powerdns, etc), but you
could do

# version-string        string reported on version.pdns or version.bind
#
version-string=anonymous
